White Spelt Bread...in the bread maker

My bread maker doesn't come with instructions for using spelt flour. Does yours? If you ever wanted to substitute this ancient grain for the modern wheat variety in your bread maker booklet, this is the recipe for you. Plus a fun twist using banana!


Makes: One, 1 lb loaf

Ingredients:

1/3 cup milk

1/3 cup mashed banana (I used frozen then thawed banana.)

1 large egg

2 1/4 cups, plus 3 tbsp white spelt flour

1 1/2 tbsp coconut sugar (can substitute cane sugar)

1 tsp salt

1 1/2 tbsp butter, cubed

1 tsp active dry or instant yeast


Directions:

Add all ingredients into your bread maker in the order listed. Make a small well for the yeast to sit in. Be sure it does not touch the wet ingredients.

Set your bread maker for the desired mode - I prefer the soft course for this bread.


When the dough is on the "mix" or "knead" cycle, check for consistency. Add up to 1 tbsp more flour if dough is very wet, i.e. not forming a ball.
